Freezing Sweet Corn

Our favourite way to freeze corn is to freeze the kernels. Simply husk your corn and prepare a big bowl of ice cold water. Then, bring a pot of water to a boil and immerse each cob in the boiling water for 30 seconds. Immediately transfer to the cold water to stop the cooking process. Remove kernels from cobs with a serrated knife and freeze in bags of the portion size you prefer. (Hint:  a bundt pan works great to collect all the kernals as they fall off!)
